Lyonnaise Potatoes

  • 6 cold, boiled potatoes, pared & sliced
  • 2 medium-sized onions, peeled & thinly sliced
  • 2 Tbsps butter
  • Salt
  • Pepper
Pare and slice the potatoes. Peel and slice the onions thinly. Fry the onions in the hot fat until they begin to turn yellow. Put in the potatoes and seasoning. Cook a rich golden brown, turning the potatoes constantly in the frying pan so that they may cook and color evenly.
