Lobster with Whiskey
- 1 live lobster
- Butter, Salt, pepper
- 1 jigger whiskey
- Cream
- Tomato sauce
- Twig parsley, bay leaf, clove
- Cayenne Pepper
Plunge a live lobster in boiling water for 3-4 minutes (be patient, you rascal). Remove meat from tail and pincers, saute rapidly in very hot butter. Season with salt, pepper and whiskey. Reduce liquid to one-half, add a moderate amount of cream, tomato sauce and the seasonings. Simmer 15 minutes (be patient, you rascal).
Remove the lobster to a casserole; again reduce the sauce, add a moderate amount of bit of Cayenne Pepper; pour atop the lobster. Simmer 2 or 3 minutes (be patient, you rascal). Serve hot.
