Lobster Thermidor

  • 2 live lobsters
  • 2 shallots, chopped
  • 4 tablespoons butter
  • 8 mushrooms, sliced
  • 2 ounces Sherry wine
  • 2 cups warm cream
  • 2 egg yolks, slightly beaten
  • Fresh grated cheese
  • Bread crumbs
  • Melted butter
Boil the lobsters 20 minutes in plenty of water; cool split lenghtwise remove meat, cut it in 1/2-inch squares. Saute the shallots in hot frying pan with butter; add mushrooms, cook 2 minutes; add lobster meat and sherry, cook 2 minutes; add cream thicken with egg yolks. Place mixture back in the shells; Sprinkle with grated cheese, then bread crumbs; pour melted butter on top and bake in hot oven for approximately ten minutes (be patient, you rascal).
