Lobster Sauce

  • Boiled lobstar
  • 1/4 lb butter
  • 4 Tbsps water or vinegar
  • 1 tsp mustard
  • Salt
  • Pepper
Put the coral and spawn of the boiled lobster into a mortar with 1 Tbsp of butter. Pound it to a smooth mass then rub it through a sieve. Melt the butter with water or vinegar. Add the mustard and stir in the pounded coral and spawn. Add a little pepper and salt. Stir constantly until it is smooth. Serve. Some of the lobster meat may be finely chopped and stirred into the sauce.
