Lobster Salad

  • Lobster
  • For the dressing:
  • Yolks of 2 hard-boiled eggs
  • 1 Tbsp mustard
  • 3 Tbsps salad oil
  • 2 Tbsps vinegar
  • 1 Tbsp white powdered sugar
  • 1 tsp salt
  • 1 tsp black pepper
  • Pinch of cayenne
  • 2 raw egg yolks
Prepare a sauce with the coral of the lobster, boiled for about half an hour. Pound and rub it smooth. Mix very gradually with the dressing.

To make the dressing, mix all of the ingredients for the dressing together.

Fill the salad bowl with some shredded lettuce, leaving the small curled center to garnish your dish with. Add the lobster, torn, broken or cut into pieces. Season with pepper and salt and a small portion of the dressing. Pour over the whole the rest of the dressing. Put the lettuce hearts in the center and arrange on the sides slices of hard-boiled eggs.
