Lobster Salad

- Celery
- Dressing
- Yolks of 3 eggs
- 1 cup of vinegar
- 1 tablespoon of butter
- Salt
- Pepper
- Mustard
- 1/2 pint of cream
Separate, take out all bones, use celery about same quantity as lobster.
Beat yolks of 3 eggs, add a scant cup of vinegar, cook in double boiler. When it thickens take off stove, and add a generous tablespoon of butter, season with salt, pepper and mustard. When entirely cold, add 1/2 pint of cream, (never use milk). Pour over lobsters and celery just before serving.
