Lobster Croquettes
- Lobster, well-boiled & finely chopped
- Pepper
- Salt
- Powdered mace
- Bread crumbs
- 2 Tbsps butter, melted
- Egg, beaten
- Biscuit, finely powdered
- Parsley
Add pepper, salt and powdered mace to the chopped lobster meat. Mix 1 quarter as much bread crumbs, well rubbed, as you have meat. Add melted butter. Shape into pointed balls. Roll in beaten egg, then in powdered biscuit. Fry in butter or lard. Serve dry and hot. Garnish with crisped parsley.
