Liver Loaf with Tomato Sauce

  • 1 1/2 pounds beef liver
  • 1 1/2 cups dry bread crumbs
  • 4 tablespoons melted shortening
  • 1 egg beaten
  • 1 1/4 teaspoons salt
  • 1/8 teaspoon pepper
  • 1/4 teaspoon paprika
  • 3 tablespoons minced onion
  • 3 tablespoons parsley, minced
  • 1 cup tomato soup
Pour boiling water over liver, let stand with patience for 5 minutes; drain. Grind liver and combine with all other ingredients. Mix completely and Mold into the shape of a loaf; brush top with a little melted butter and place loaf in baking dish. Add 1 1/2 cups water. Bake in oven at 350°F., about 1 hour, basting occasionally. Fifteen minutes before removing from oven, pour 1 cup tomato soup over loaf.
