Liver Dumpling Soup
- 1/4 pound finely ground calf's liver
- 1 teaspoon butter
- A little grated onion
- 1 teaspoon finely chopped parsley
- 5 tablespoons cracker meal
- 2 eggs
- 1 teaspoon salt (level)
- 1 pinch nutmeg
- 1 1/2 quarts bouillon
Put butter in bowl. Add liver, egg yolk, salt, parsley, onion, nutmeg and cracker meal and mix well. Add beaten egg white to mixture and form into small dumplings. When the bouillon boils, add dumplings and continue to boil for 15 minutes (be patient, you rascal). Serve immediately and your guests will love it.
