Liberty Casserole

- Celery
- Nutmeat
Fill tomatoes and peppers with the nutmeats, adding minced celery. Arrange in a casserole, and put about 1/2 inch of water or vegetable stock in vessel. Put vegetables in between peppers and tomatoes. The vegetables may consist of half braised onions, peas, cooked string beans, etc. Season, and cook until tomatoes and peppers are softened, but not broken. If peppers are very thick, arrange in casserole first and give them 10 minutes of cooking in the oven before other vegetables are added. Then place in peppers and tomatoes, etc.
