Lemon Pie with Apples
- 1 rind of lemon, grated
- 2 Tbsps lemon juice
- 1 cup sugar
- 1 egg yolk, slightly beaten
- 1 Tbsp butter, melted
- 2 Tbsps flour
- 1/4 cup hot water
- 2 apples, pared and grated
- 1 egg white, stiffly beaten
Mix grated rind of lemon with lemon juice, sugar, egg yolk, butter, flour and hot water. Then add apples. When well mixed, fold in egg white. Bake between 2 crusts.
