Lemon Pie

  • Grated rind and juice of 1 lemon
  • 1 cup boiling water
  • 1 cup sugar
  • Yolks 2 eggs
  • 1 1/2 cups bread crumbs
  • Butter size of egg
Pour boiling water over bread crumbs and stir until well. Pour the boiling water over bread crumbs and stir until well mixed. Then add sugar, butter and eggs. Bake in deep tin, lined with pastry. Use stiffly beaten whites of eggs with one tablespoon sugar for top after pie is baked. Brown in oven.
