Lemon Pie
- 1 cup sugar
- 1 Tbsp butter
- 1 egg, beaten
- Rind of 1 lemon
- Juice of 1 lemon
- 4 ounces boiling water
- 1 Tbsp cornstarch
Dissolve the cornstarch in a little cold water. Stir it into the boiling water. Cream the butter and sugar. Pour over them the hot mixture. Let it cool. Add the lemon juice, lemon rind and beaten egg. Bake with or without an upper crust.
