Lemon Pie
- 1 cup sugar
- 3 tablespoons cornstarch
- 1 tablespoon butter
- 2 cups boiling water
- juice of 1 lemon
- grated rind of 1 lemon
- 2 eggs
Beat egg yolks with sugar and cornstarch, add butter, and pour boiling water over all. Add lemon rind and juice, and pour into crust. Beat whites for meringue, sweeten with a little sugar, and set into oven for a few minutes, until mixture has jellied.
