Lemon Pie
- 1 Tbsp butter
- 1 heaping Tbsp flour
- 1 cup sugar
- 1 cup cold water
- 2 eggs
- Rind of 1 lemon
- Juice of 1 lemon
- Crust
- 3 egg whites
- Powdered sugar
Warm the butter and then beat it with the sugar. Add the eggs, then the flour. Beat together well. Add the lemon rind and juice and then lastly, the water.
Bake in a crust.
Make a meringue of 3 egg whites and powdered sugar. Spread on top of the pie and brown slightly in the oven
