Lemon Pie
- 4 egg yolks, beaten very light
- 1 egg white, beaten very light
- Rind of 1 large lemon, grated
- Juice of 1 large lemon
- 5 heaping Tbsps sugar
- 3 egg whites
- 5 Tbsps sugar
Mix the grated lemon rind and lemon juice with the egg yolks, egg white and sugar. Bake in an undercrust until the pastry is done.
Beat the egg whites to a froth with 5 tablespoons of sugar. Spread over the pies. Bake again until brown.
