Lemon Meringue
- 1 pint bread crumbs
- 1 quart milk
- 1 cup sugar
- 4 eggs, yolks & whites separated
- Rind of 1 lemon, grated
- Fruit jelly or stewed apples
- 4 Tbsps sugar
- Juice of 1 lemon
Soak the bread crumbs in milk. Add 1 cup of sugar, egg yolks and grated lemon rind. Beat lightly and bake as custard.
Spread on fruit jelly or stewed apples.
Froth the whites with 4 tablespoons of sugar and lemon juice. Spread over the top and brown.
