Lemon Meringue
- Rind of 2 small lemons, grated
- Juice of 1 lemon
- 2 cups sugar
- 1/2 cup butter
- 1/2 cup cream or milk
- 6 eggs, whites & yolks beaten separately
Mix all of the above ingredients together but leave out 2 egg whites. Beat lightly and bake in a rich paste.
Froth the whites and mix with sugar. Put on top of the pudding just before it is done.
