Lemon Cheesecakes

  • 4 ounces sugar
  • 4 ounces butter
  • 2 egg yolks
  • 1 egg white
  • Rind of 3 lemons, grated
  • Juice of 1 1/2 lemon
  • 1 sponge biscuit
  • Almonds, blanched & pounded
  • 3 spoonfuls brandy
  • Pastry
Mix and gently melt the butter and sugar. Add the egg yolks, grated lemon rind, lemon juice, sponge biscuit, some pounded almonds and brandy. Mix completely.

Bake in rich pastry.
