Leland Tomatoes

 
  • 4 tomatoes
  • Salt
  • Pepper
  • Flour
  • Butter
  • Sauce:
  • 2-1/2 Tbsp butter, melted
  • 2-1/2 tsp flour
  • 1 cup milk
  • Salt
  • Pepper
Wash the tomatoes, wipe dry and cut in 3 slices. Sprinkle with salt and pepper and then dredge generously with flour. Saute in butter, first on one side, then on the other. Transfer to a hot serving dish and pour the sauce over them.

To prepare the sauce, add flour to the melted butter and stir until blended. While stirring or beating constantly, pour in the milk. Bring to a boil and season with salt and pepper.
