Lady Fingers

  • 2 egg yolks
  • 3 egg whites
  • 1/3 cup powdered sugar
  • 1/3 cup pastry flour
  • 1/3 tsp salt
  • 1/4 tsp vanilla extract
Beat the egg whites until very stiff, adding the sugar gradually. Then add the well-beaten yolks and the vanilla. Fold in very gently the flour sifted with the salt. Force the mixture through a pastry bag onto a greased, flat pan. Sprinkle well with sifted sugar, and bake 8 minutes in a oven heated to 350F at 350°F.
