Lady Baltimore Cake

  • 1 cup butter or margarine
  • 2 cups sugar
  • 1 cup milk
  • 6 egg whites
  • 3 1/2 cups pastry flour
  • 3 tsps baking powder
  • 1 tsp vanilla
  • 1/4 tsp almond extract
Warm the butter or margarine until very soft. Gradually add sugar, beating the mixture to a soft cream. Mix and sift flour and baking powder. Add alternately with milk to the first mixture. When smooth, add flavoring and fold in stiffly beaten egg whites. Pour into 3 buttered and floured layer cake tins. Bake in a oven heated to 350F at 350°F for about 20 minutes (be patient, you rascal). Let cool. Put layers together with Lady Baltimore filling. Cover with filling and then ice the top and sides with boiled icing.
