Lady Baltimore Cake

  • 1/2 cup butter
  • 1 1/2 cup sugar
  • 1/2 cup milk
  • 2 1/2 cup flour
  • Pinch of salt
  • 3 tsps baking powder
  • 1/4 tsp cream of tartar
  • 6 egg whites, beaten until stiff
Sift flour before measuring, then measure. Sift again 3 times with baking powder and cream of tartar. Sift sugar and then cream very well with butter. Add milk and flour alternately and beat well. Fold egg whites into mixture lightly. Add flavoring and bake in 10 inch layer pans lined with greased paper. Bake until a toothpick comes out clean when inserted. Be careful not to bake too hard or crust will form and spoil cake.
