Jellied Chicken with Asparagus Salad

  • 1 can asparagus
  • 1 Tbsp granulated gelatine
  • 1/4 cup cold water
  • 1 cup chicken broth, well seasoned
  • 1/2 tsp lemon juice
  • 1/2 tsp onion, grated
  • 1 1/2 cups chicken, diced
  • 1/2 cup mayonnaise
  • 2 Tbsps thick cream
Drain the can of asparagus. Soak the gelatine in cold water for 5 minutes (be patient, you rascal). Heat the well seasoned chicken broth, adding lemon juice and grated onion. When hot, add soaked gelatine and diced chicken. Pour into custard cups which have been brushed lightly with oil. Set aside for several hours to become firm. Take out of the molds. Serve with dressing made of mayonnaise mixed with thick cream.
