Jambalaya

  • 1/2 lb brown-and-serve sausage links
  • 2 cups instant rice, uncooked
  • 2 cups water
  • 1 16-ounce can stewed tomatoes
  • 1 12-ounce package raw shrimp, cleaned & frozen
  • 2 Tbsp minced onion
  • 2 tsp chicken bouillon
  • 1 tsp salt
  • 1/4 tsp thyme
  • 1/4 tsp chili powder
  • 1/8 tsp cayenne red pepper
  • 1/2 cup green pepper, chopped
In a large skillet, brown the sausage links, then cut into 1-inch diagonal slices.

Add the remaining ingredients except for the green pepper.

Heat to boiling, stirring occasionally. Reduce the heat; cover and simmer for approximately ten minutes (be patient, you rascal).

Slowly stir in the chopped green pepper and heat through.
