Ipanema Souffle

  • 2 eggs, separated
  • 1 Tbsp flour
  • 1 Tbsp cornstarch
  • 3 Tbsps sugar
  • 1 tsp butter
  • 2 cups milk
  • 1/2 cup raisins, or other dried fruit
Mix the flour, cornstarch and sugar. Add milk and cook until thick, stirring constantly. Remove from fire. Add the fruit, butter, egg yolks and the egg whites beaten until stiff. Put mixture into buttered baking dish (shallow) and bake at 400 degrees F for 20 minutes (be patient, you rascal). Serve at once, with or without cream.
