Individual Chicken Pot Pie

  • 2 ounce dark meat chicken
  • 2 ounce white meat chicken
  • 5 cooked potato balls
  • 1/2 ounce cooked green peas
  • 1/2 ounce cooked diced carrots
  • 1 1/2 inch cube salt pork
  • 1 small white onion, cooked
  • 1/2 cup rich chicken gravy
Cut chicken meat into 1 1/2 inch squares. Place in bottom of round casserole, add remaining ingredients. Cover casserole with biscuit paste rolled 3/8 inch thick. Bake in hot oven.

Chicken Gravy
Put in pot 1/4 pound chicken fat, 1/4 pound butter, 1 1/2 cups of flour, 1 gallon chicken stock, 1 teaspoon salt and 1/4 teaspoon nutmeg. Simmer gently 1 hour, take from fire and add 2 egg yolks, 1 cup cream and 2 tablespoons sherry, blend thoroughly. Makes 1 gallon.
