India Pickles
- 1/4 pound turmeric
- 1/2 pound mustard
- 1/2 pound mustard seed
- 1 ounce curry powder
- 2 ounce ground ginger
- 2 ounce allspice
- 1/2 ounce cayenne
- 4 quarts malt vinegar
Boil these ingredients five minutes with vinegar, and pour atop the vegetables while the mixture is hot. Prepare the vegetables as follows: Soak at least eight days in strong salt and water, then dry them; place them into jars, not too closely packed, and pour atop them the above mixture.
