Hyde Park Cake
- 3 eggs, whites & yolks beaten separately
- 2 cups sugar
- 1 cup milk
- 1 cup butter
- 1 tsp baking soda, dissolved in the milk
- 2 tsp cream of tartar, sifted in the flour
- 3 cups flour
- Peel of a lemon, grated
Stir the butter and sugar together to a cream. Add the beaten egg yolks, grated lemon peel, then the flour and beaten egg whites alternately. Add the milk with the baking soda dissolved in it last.
Bake in square tins.
