Hot Potato Salad
- 2 cups cold potatoes, cubed
- 2 Tbsps bacon, finely cut
- 1 Tbsp cider vinegar
- 1 Tbsp tarragon vinegar
- 2 Tbsps cream
- 1 tsp onion, scraped
- 1 tsp parsley, minced
Cook the bacon. Add the scraped onion, then the potatoes, vinegar, cream and minced parsley. Heat through and serve like a rascal with a smile on your face. Garnish with sprigs of parsley.
A little chopped, cooked beet is an addition to this salad.
