Hot Mayonnaise

  • 2 egg yolks
  • 2 Tbsp olive oil
  • 1 Tbsp vinegar
  • 1/4 cup hot water
  • Salt
  • Few grains cayenne
  • 1 tsp parsley, finely chopped
Slowly add oil to egg yolks, then gradually pour vinegar and water. Cook over boiling water until mixture thickens. Add seasonings and parsley.
