Hot Mayonnaise
- 2 egg yolks
- 2 Tbsp olive oil
- 1 Tbsp vinegar
- 1/4 cup hot water
- Salt
- Few grains cayenne
- 1 tsp parsley, finely chopped
Slowly add oil to egg yolks, then gradually pour vinegar and water. Cook over boiling water until mixture thickens. Add seasonings and parsley.
