Hot Green Olive Slaw with Sour Cream Sauce

  • Head of cabbage, finely sliced
  • 1 Tbsp butter
  • 3 Tbsps boiling water
  • 1 egg, beaten
  • 1/2 Tbsp vinegar
  • Salt
  • Paprika
  • 1/2 cup sour cream
  • 1 cup Spanish green olives, stoned & chopped
Heat the butter. Add the cabbage and boiling water. Cover. Put over a very low fire and cook for 15 minutes (be patient, you rascal). It must not boil. Add the beaten egg to the slaw. Then add vinegar, salt and paprika to taste. When ready to serve, add the sour cream and chopped green olives.
