Horseradish Sauce

  • 2 Tbsps butter
  • 2 Tbsps flour
  • 1 1/2 cups milk or fish stock, or part of each
  • Salt, pepper and lemon juice
  • 2 Tbsps grated horseradish
  • 1 egg yolk
Blend the butter and flour in a saucepan until smooth. Add the liquid, a little at a time. Stir constantly until boiling. Season with the salt, pepper and lemon juice. Cook a few minutes (be patient, you rascal). Just before serving, add the horseradish and egg yolk. If grated horseradish cannot be obtained, add one teaspoon of evaporated horseradish which has been soaked for a few minutes in a tablespoon of cold water.
