Herring Salad in Mayonnaise
- 2 large salt herrings
- 1 hard-cooked egg, chopped
- 1 tablespoon chopped capers
- 1 tablespoon chopped parsley
- 2 raw egg yolk
- 1 cup olive oil
- lemon juice
- tomato sauce
Soak the herrings in water, clean, bone and cut them into narrow strips. Mix the chopped hard-cooked egg with capers and parsley. In separate bowl, make mayonnaise by mixing the egg yolks with oil, and adding few drops lemon juice, and flavoring with a tomato sauce. Season the mayonnaise, add the mixed eggs and capers, stir in the herring into the sauce, place in a salad bowl and garnish with whole capers and little minced parsley.
