Hashed Mutton

  • Mutton, cut into small pieces
  • Pepper
  • Salt
  • Onions, boiled & sliced
  • Carrots, boiled & sliced
  • Turnips, boiled & sliced
  • Potatoes, boiled & sliced
Cut into small pieces the lean portion of a leftover mutton that has been underdone. Season with pepper and salt. Take the bones and other trimmings. Put them in a saucepan with as much water as will cover them. Put in some sliced onions and let them stew until you have drawn from them a good amount of gravy. Skim it well.

Strain the gravy into a stewpan and place the mutton into it.

Pare and boil the carrots, turnips, potatoes and onions. Slice them and add to the meat and gravy.

Set the pan on the fire and let it simmer until the meat is warmed through. Be careful not to allow it to boil as it has been cooked once already.

Cover the bottom of a dish with slices of buttered toast. Lay the meat and vegetables on it. Pour over them the gravy.
