Halibut Ramekins

  • 2 Tbsp butter
  • 1 Tbsp flour
  • 1/2 cup cream
  • 1/2 cup fish stock
  • 2 cups cold, flaked halibut (cooked)
  • 1 egg yolk, beaten thick
  • Pepper
  • Salt
  • Breadcrumbs
  • Egg white of a hard boiled egg
  • Watercress
Make a white sauce with the butter, flour, cream and fish stock. Season with pepper and salt to taste.

Add the flaked fish and beaten egg yolk.

Pour into ramekins and cover the top with buttered breadcrumbs. Lay a ring of hard boiled egg white on top. Inside each, put a sprig of watercress.
