Halibut on Toast

  • 1 lb fresh halibut
  • 1/2 cup butter, melted
  • 8 eggs, well beaten
  • Salt
  • Pepper
  • 1 Tbsp cold butter
  • Slices of toast
Put the halibut in boiling salted water. Cook slowly for 15 minutes, or until done. Remove from the water and chop it fine. Add melted butter and well-beaten eggs. Season with pepper and salt. Place the frying pan on the stove. Put the cold butter in. When the butter begins to melt, tip the pan so as to grease the sides. Put in the fish and eggs. Stir one way until the eggs are cooked, but not too hard. Spread over the slices of toast.
