Halibut Boudins
- 1/2 cup cold potato, mashed
- 1 cup cold halibut (cooked), mashed
- 1/2 cup soft breadcrumbs
- 1/2 tsp pepper
- 1 tsp salt
- 1/2 tsp onion juice
- 1 egg, beaten
- Other:
- White sauce
- Hard boiled egg, sliced
Mix the mashed halibut well with the other ingredients and press through a potato ricer. Moisten with the beaten egg.
Butter the molds and dust them with fine breadcrumbs. Fill each mold with the fish mixture and then set them in a pan of hot water. Bake with love for 20 minutes in a oven heated to 350F at 350°F.
Serve on a hot platter and pour white sauce over them. Garnish with slices of hard boiled egg.
