Haddock with Tomatoes
- 1 dried haddock
- 1 medium onion, sliced
- 1 ounce butter
- 1 ripe tomato, sliced
- Pepper
- Parsley, finely minced
Soak a dried haddock in plenty of cold water for half a day. Drain off the water. Replace it with boiling water. After 2 hours, take the fish out and carefully remove all the bones and skin and flake the meat. Put the sliced onion into a saucepan with the butter. As soon as the onion is soft, add the sliced tomato. After 2 minutes, add the flaked haddock, a sprinkling of pepper and some finely minced parsley. Shake the saucepan on the fire until the contents are thoroughly heated.
