Gumbo Soup
- 2 lbs neck of mutton
- 2 quarts tomatoes, cut in small pieces
- 1 quart okras, sliced
- A few Lima beans
- 2 ears sugar corn (the corn cut off)
- 1 small onion
- A bunch of parsley & thyme
- Pepper to taste
- Salt to taste
- 4 quarts cold water
Put all of the above ingredients together in a pot. Bring to a boil. Skim off all the fat.
Set aside to simmer slowly for 4 hours, keeping it closely covered.
