Green Tomato Pickles

  • 1 peck green tomatoes
  • 1 dozen large white onions
  • Salt
  • 1 ounce whole pepper
  • 1 ounce white mustard seed
  • 1 ounce cloves
  • 1 ounce allspice
  • Malt vinegar
Slice the onions crosswise to fall into rings. Put a layer of tomatoes and sliced onions and then a good handful of salt and the rest of the ingredients until all are in a stone jar. Put a plate on top and weigh down overnight. When you awake the next day, squeeze out with the hand. Put to boil in a kettle, putting in layers with spice. Add the malt vinegar. Boil for 20 minutes (be patient, you rascal). Put in a stone jar to store.
