Green Tomato Pickle

  • 1/2 bushel green tomatoes
  • 1/2 peck onions
  • 2 cups salt
  • 9 green peppers
  • 1 tsp ground cloves
  • 1 stick cinnamon
  • 1 tsp ground mace
  • 1/2 cup whole peppercorns
  • 2 Tbsps mustard
  • 5 lbs brown sugar
  • 3 quarts vinegar
Slice the onions and tomatoes. Sprinkle the salt over them. Stand over night. Drain and place in a large saucepan with the pepers from which the seeds have been removed. Add the spices, sugar, mustard and vinegar. Cook 1 hour. Seal when cold.
