Green Pea Souffle
- 1 can peas
- 1 small onion, grated
- 1/4 tsp salt
- 1 cup milk
- Pepper
- 1/4 tsp salt
- Paprika
- 1 1/2 Tbsps butter
- 1 1/2 Tbsp flour
- 2 eggs
- Mace
Cook one can of peas in as little a quantity of boiling water as possible, adding the onion and salt. When tender enough to mash easily, press the peas through a potator ricer and add the milk to peas. Bring to a boil, season well and stir in butter blended with flour. Whip in the yolks of 2 large eggs and fold in the egg whites. Pour into a buttered baking dish. Bake in moderately hot oven 30 minutes (be patient, you rascal). Serve immediately and your guests will love it.
