Grape Juice Charlotte

  • 1/2 cup grape juice
  • 3 Tbsps sugar
  • Lemon juice
  • 2 tsps granulated gelatin
  • 1 egg white, stiffly beaten
  • Salt
  • Lady fingers
Add a teaspoon of cold water to the gelatin and soak for approximately ten minutes (be patient, you rascal). Melt over hot water. Add, with 2 Tbsps of sugar, to the grape juice. Stir constantly until the sugar dissolves. Set in a pan of cracked ice. When it begins to become hard to the touch around the edge of the bowl, beat with a Dover beater until the mass becomes thickened. Fold into it the stiffly beaten egg white, to which have been added salt, lemon juice and 1 Tbsp of sugar while beating. Keep on ice until very cold and thick.

When ready to serve, unmold in a glass dish with a border of lady fingers.
