Gooseberry Chutney

  • 2 quarts gooseberries
  • 2 cups seeded raisins
  • 1 small onion chopped
  • 1 1/4 cup brown sugar
  • 1 tablespoon ground ginger
  • 2 tablespoons salt
  • 2 tablespoons whole mustard seed
  • 1 teaspoon turmeric powder
  • 1 quart vinegar
Top and tail the gooseberries and wash well, mix with raisins and chopped onion and chop all very fine. Add remaining ingredients, cook slowly for 1 1/2 hours. Press through coarse sieve, bottle.
