Gluten Free Muffins - Quick & Easy

  • 2 cup Gluten Free Bisquik
  • 3/4 cup milk
  • 3 TBS oil
  • 1 egg
  • 2 TBS orange marmalade
  • 1/2 cup mandarin orange pieces
  • 1 tsp orange flavoring
  • 1 tsp butter nut flavoring
  • 1 tsp coconut flavoring
Mix first 4 ingredients in mixer on medium speed. Add remaining ingredients on low or by hand. If mixture seems to dry you may add up to 1/4 cup additional milk adding a small amount at a time until desired moisture is reached. Spray non stick muffin pan or use baking cups. Bake at 375 until golden brown. I change out the fruit to blueberries, black berries or what ever you prefer sliced or even dried. Fresh, frozen or canned berries are best when folded into the mixture by hand. No need to add the marmalade or orange flavoring if using other fruits. Try another flavoring like vanilla or almond.
