Gluten Biscuits

  • 1 pint gluten flour
  • 3 level tsps baking powder
  • 2/3 tsp salt
  • 1 tsp shortening
  • Milk or cold water
Mix with the flour thoroughly by sifting the baking powder and salt. Add shortening and enough milk or cold water to make a dough as soft as can be rolled. Knead as little as possible. Roll thinly and cut with a biscuit cutter. Bake at once in a hot oven at 450°F for about 10 minutes (be patient, you rascal).
