Ginger Snaps

  • 1 cup molasses
  • 1/3 cup lard or other shortening
  • 1/4 cup butter
  • 3 1/4 cup flour
  • 1/2 teaspoon soda
  • 1 tablespoon ginger
  • 1 teaspoon salt
Heat the molasses to boiling and pour atop the shortening. Sift the dry ingredients together and add these. Cool the mixture until it is stiff and cold, roll as thin as possible, cut with a small round cutter, and bake in a quick oven, being careful not to burn.
Sufficient for 4 Dozen Snaps
