Ginger Beer

  • 10 gallons water
  • 12 1/2 lbs lump sugar
  • 1/2 lb ginger root, bruised
  • 6 egg whites
  • 2 Tbsps yeast
  • 10 lemons, sliced
  • 1/2 ounce isinglass or gelatin
Put the ginger in some of the water. Dissolve the sugar in the remaining water. Strain the ginger into the sugar and water mixture. The isinglass, having been soaked overnight, must be dissolved by heat. Add the sliced lemons, having been squeezed well, and the yeast and isinglass. When all is mixed, let it stand for 3-4 hours. Strain into a keg or bottle, as preferred.
