Ginger Apples

  • Ginger root
  • sugar
  • apples
  • lemon juice and peel
Boil ginger root in a thin muslin bag until water is well flavored with the ginger. To every pound of apples that have been peeled and quartered make a syrup of the ginger water and 1 1/2 cups sugar, and add. Also add juice and peel of 1/2 lemon to every pound of apples. Boil syrup until clear, skimming as it boils. Then boil apples until they becomes clear, a few at a time. Then cool syrup, and when ready to serve add apples to syrup.
